Protein Pancakes for Kids with Sprout Junior Protein

As a dietitian and a parent, I'm always on the lookout for nutritious, kid-friendly recipes. Today, I'm happy to share my family's favourite weekend breakfast - vegan protein pancakes made with Sprout Organic Junior Plant Protein!

Sprout Organic Junior Protein Blender Pancakes 

(Serves: Makes 6-8 pancakes)

Ingredients:

  • 1 scoop (or half a packet) Sprout Organic Junior Plant Protein (we love the chocolate) 
  • 3/4 cup plant-based milk (we love soy milk)
  • 1 1/2 frozen bananas
  • 1 cup oats
  • 1 tablespoon flaxmeal
  • 1/2 teaspoon baking powder
  • Fresh fruit, nut butter, and maple syrup for topping (optional)

Instructions:

  1. Add all ingredients to a high-speed blender. Blend until smooth and well combined.
  2. Heat a non-stick pan over medium heat.
  3. Drop the batter by 1/4 cupfuls onto the pan.
  4. Cook for 2-3 minutes or until bubbles appear on the surface and the edges start to dry.
  5. Flip and cook for another 1-2 minutes or until golden brown.
  6. Serve topped with your little one's favourite fruit and nut butter for a delicious and nutritious breakfast!
