Veggie-Stuffed Savoury Muffins for Kids

These hearty savoury muffins for kids use a range of mixed vegetables with sauteed onions to make a flavoursome savoury snack that’s packed with goodness and perfect for any time of the day. Dairy-free, easy to make, and using everyday ingredients that you will most likely already have at home, these muffins are super tasty and satisfying.

While the ingredients can be swapped and changed to your little ones’ tastes, we’d recommend staying steadfast with caramelized onion, which in combination with the sweetcorn is the perfect sweet flavour combination that makes these muffins burst with flavour!


Ingredients for caramelized onion


  • 1 red onion thinly sliced
  • 1 teaspoon cooking oil
  • 1/8 teaspoon sugar
  • 1/2 teaspoon salt

Ingredients for batter


  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tbsp mixed herbs
  • 0.5 tsp ground black pepper
  • 1 pinch Salt to taste 
  • 1 cup chopped tomatoes
  • 0.5 cup sweet corn kernels
  • 0.5 cup finely chopped red capsicum
  • 0.25 cup chopped spring onion
  • 1.25 cups plant-milk
  • 1 tsp apple cider vinegar
  • 0.25 cup + 1 tablespoon neutral flavoured cooking oil

Method 


  1. Heat 1 teaspoon oil in a pan and saute onions until caramelized. 
  2. Add plant milk and apple cider vinegar to a bowl. Mix and leave aside until the milk curdles (usually a few minutes).
  3. Mix flour, baking soda, baking powder, pepper, salt, and Italian herbs in a bowl.
  4. In a larger bowl, mix the curdled milk and oil. Add the dry ingredients and mix well.
  5. Add caramelized onion, tomatoes, corn, capsicum, and spring onion. Mix.
  6. Put the muffin batter in muffin moulds and bake in a pre-heated oven at 180°C for around 25 minutes - toothpick test.
  7. Allow to cool on a cooling rack and then unmold. Enjoy!
