Meatless Monday Recipe: Cheesy Broccoli Bites

These cheesy broccoli bites are a great snack or side dish for any meal. Plus, they're a fantastic way to sneak in some veggies for picky eaters! Give them a try and let us know what you think!
Ingredients
- 2 cups broccoli florets, finely chopped
- 1/2 cup vegan cheddar cheese, shredded
- 1/2 cup breadcrumbs
- 1/4 cup almond flour
- 1/4 cup nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/4 cup vegan mayonnaise
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
Instructions
- Preheat your oven to 200°C (400°F) and line a baking tray with baking paper.
- In a large mixing bowl, combine the chopped broccoli florets, vegan cheddar cheese, breadcrumbs, almond flour, nutritional yeast, garlic powder, onion powder, salt, and pepper.
- In a separate bowl, whisk together the vegan mayonnaise and flax egg until smooth.
- Pour the mayonnaise mixture over the broccoli mixture and stir until well combined.
- Using a small spoon, form the mixture into small balls and place them onto the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and crispy on the outside.
- Serve immediately and enjoy!
