Today, we want to share a family-favourite recipe that's easy to make and packed with nutritious goodness!

These cheesy broccoli bites are a great snack or side dish for any meal. Plus, they're a fantastic way to sneak in some veggies for picky eaters! Give them a try and let us know what you think!

 

Ingredients

  • 2 cups broccoli florets, finely chopped
  • 1/2 cup vegan cheddar cheese, shredded
  • 1/2 cup breadcrumbs
  • 1/4 cup almond flour
  • 1/4 cup nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup vegan mayonnaise
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking tray with baking paper.
  2. In a large mixing bowl, combine the chopped broccoli florets, vegan cheddar cheese, breadcrumbs, almond flour, nutritional yeast, garlic powder, onion powder, salt, and pepper.
  3. In a separate bowl, whisk together the vegan mayonnaise and flax egg until smooth.
  4. Pour the mayonnaise mixture over the broccoli mixture and stir until well combined.
  5. Using a small spoon, form the mixture into small balls and place them onto the prepared baking sheet.
  6. Bake for 20-25 minutes or until golden brown and crispy on the outside.
  7. Serve immediately and enjoy!
