Strawberry Oat Cups with Sprout Organic Kids Essential Shake

Perfect for lunchboxes, after school snacks or breakfast on the run, these Strawberry Oat Cups are a wholesome, naturally sweet treat your kids will love (and you’ll feel great about serving).

Packed with healthy fats from flax meal, quality plant-based protein from Sprout Organic Kids Essential Shake, and energy boosting oats, they’re the perfect balance of nutrition and taste.

Make a batch on Sunday and you’ll have nourishing snacks ready for the week ahead... though we can’t promise they’ll last that long!

Serves: 6

Ingredients

Base:

  • 1 cup pitted dates, soaked in water for approximately 1 hour to soften (reserve soaking liquid)

  • 1 ½ cups rolled oats, blended until fine

  • ¼ cup Sprout Organic Kids Essential Shake (Vanilla)

  • 1 tbsp flax meal

  • 3-4 tbsp of reserved date liquid

Strawberry Filling:

  • 2 cups frozen strawberries

  • ¼ cup water

  • 1 tbsp chia seeds

Directions:

1. Make the Base:

Blend the soaked dates, blended oats, Sprout Organic Kids Essential Shake, and flax meal until well combined.
If the mixture seems too dry, add 3-4 tablespoons of the reserved date liquid and blend again until sticky and dough like.

2. Make the Strawberry Filling:

In a small saucepan, heat the frozen strawberries and water until softened and most of the liquid has evaporated.
Mash gently with a fork to form a chunky jam like consistency.
Set aside to cool, then stir in the chia seeds. Let sit for 10-15 minutes to thicken.

3. Assemble:

Press the oat base mixture firmly into silicone muffin cups, bringing it slightly up the sides to form a cup shape.
Spoon the thickened strawberry filling into the centre of each cup.
Refrigerate for around 2 hours or until set.

4. Enjoy:

Pop them out of the moulds and serve straight from the fridge or pack them into lunchboxes for a naturally sweet, nourishing snack on the go.

Tip: Try swapping strawberries for blueberries or raspberries for a fun flavour twist!
